Bhindi Masala

Okra delicately cooked in a simple assortment of spices, onion and potato.

Cooking Instructions:

  1. Wash and dry the okra. Cut both the ends and further cut into small pieces along the length.
  2. Heat some oil in a pan and brown the potatoes on high heat. Set aside.
  3. Heat some more oil in a pan and add the cumin seeds. When they change colour, add okra.
  4. Fry on medium heat for around 10 minutes. Now add onions and sprinkle the red chilli, coriander and turmeric powders.
  5. Mix well. Add the fried potatoes and cook covered over low heat stirring occasionally.
  6. Add the salt and Aamchur (dry mango powder). When the okra is almost cooked, increase the heat and cook for two minutes.
