BOONDI RAITA
Raita is a flavoured yogurt used as an accompaniment to balance the flavours in an Indian meal. Boondi are tiny-spiced gram flour balls that lend a unique texture and taste to the raita.

Health Hack: Yogurt mixed with spices acts as a cooling agent and aids digestion.
Fresh Ingredients
- Boondi – 70 grams
- Yogurt - 500 grams
- Fresh coriander - 2 tbsp, finely chopped
- Milk - 100 mls to adjust consistency
Spices
- Himalayan salt – 1/8 tsp.
- Roasted cumin powder - ½ tsp.
- Kashmiri chilli powder - ½ tsp.
Step 1
Whisk yogurt with a little milk until it has a smooth consistency.
Step 2
Soak Boondi separately in water for a couple of minutes and then gently squeeze out the water from the gram flour balls.
Step 3
Add salt, half the roasted cumin powder, and half of the chopped coriander to the yogurt.
Step 4
Add Boondi to the yogurt and mix well.
Step 5
Garnish with the remaining roasted cumin powder, Kashmiri chili powder, and chopped coriander.
Step 6
Serve chilled and enjoy as an accompaniment to your meal.
